用少量特級初榨橄欖油煎煮西芹、紅蘿蔔和洋蔥。
加入去皮蕃茄和香草。
灑上鹽作調味,繼續炆煮。
煮熟後取走香草。用攪拌器徹底攪拌材料,然後放入密孔篩裡隔渣。如有需要,可加入油
或大豆卵磷脂令醬汁乳化。
在麵包上鋪滿Zampone Modena PGI (摩德納贊波尼香腸 PGI) , 事先用易潔鑊加入少量油
烤脆。最後淋上蕃茄醬,並加上煎過的青辣椒。
