將茄子洗淨去皮。
切成小塊,放入沸水中煮。
煮熟後瀝乾並擠出水分。徹底擠乾水分。
把 Mortadella Bologna PGI (波隆那莫爾塔德拉香腸PGI)、佩克里諾羊奶芝士和羅勒葉加
入攪拌機,徹底攪拌。加入茄子肉。
加入蛋、鹽、胡椒和適量麵包糠,令質地變得結實。
把肉餡捏成大小相約的肉丸,再裹上麵包糠,放入油炸。
把肉丸炸到金黃色,放上廚房紙上吸油。趁熱上碟。

• 8塊羅勒葉
• 適量鹽
• 1隻蛋
• 適量胡椒
