Fry the celery, carrot and onion in a little extra virgin olive oil.
Add the peeled tomatoes and herbs.
Season with salt and leave to cook.
When cooked, remove the herbs.
Mix the ingredients in a blender and use a fine-mesh sieve to sieve the mixture.
If necessary, emulsify the sauce with oil or soy lecithin.
Fill the roll with the Zampone Modena PGI (pre-roasted in a non-stick pan with a little oil).
Top it off with the tomato sauce and fried green chilli peppers.

• 1 kg of Zampone Modena PGI
• 500 g of peeled tomatoes
• 100 g of celery
• 100 g of carrots
• 100 g of onions
• Herbs to taste (marjoram, sage, rosemary and laurel)
• Extra virgin olive oil to taste
• Salt and pepper to taste
• Chilli pepper to taste (optional)
